Vegan Chunky “Bleu Cheese” Dressing

Makes about 1 Cup

¼ Cup firm tofu, drained, patted dry and crumbled
1 large garlic clove, minced
¼ Cup fresh lemon juice
½ Cup vegan mayo (like vegenaiseā„¢)
2 TBS. Sesame tahini
2 tsp. Mellow white miso
2 tsp. Apple cider vinegar
2 TBS. Fresh parsley, finely chopped
2 tsp. Chives or green onion, minced
-pinch white pepper
-pinch salt
Freshly ground pepper to taste
A bit of soymilk for thinning if needed

1. In a medium sized mixing bowl whisk all ingredients except for tofu well, until everything is smooth and creamy. Add crumbled tofu, and stir well until tofu is incorporated. Mixture should be thick. Thin with soymilk if needed. Taste and adjust seasonings. Serve immediately or store covered in fridge to chill and allow flavors to meld.
